extra-virgin olive oil plus additional oil for brushing pan
plum tomatoes, quartered lengthwise
hot turkey sausage links
Swiss chard, ribs removed and chopped and leaves coarsely chopped
red onions, sliced
1 (16 ounce) package
dried whole-wheat pasta, such as chiocciole or pipette
grated reduced-fat mozzarella
finely grated reduced-fat Parmigiano-Reggiano
I found this to be an interesting take on one of my favorite swiss chard dishes - instead of turkey sausage use italian sausage (spicy is best)...can be prepared in a skillet instead of oven to save time.
A little time-consuming to prepare, but the very tasty result is well-worth it!
