Recipe by Steve Tomasso
"A fish dinner that is steamed in the oven to bring all the flavors of the veggies and fish to your pallet. Choose a firm, white fleshed fish like cod, scrod, or bass to make this dish. You may use green, red or yellow bell peppers. No need for a side dish unless you 're really hungry, but then again ... dessert!"

salt and pepper to taste
red bell pepper, chopped
leek, bulb only, chopped
zucchini, thickly sliced
celery, cut into thin 3 inch long slices
white fish fillets
tomato, seeded and chopped

WOW. I can't beleive how simple and tasty this is!! The only change I made was I pre-cooked the chopped potatoes in the microwave for 8 minutes-then tossed in 2tb oil and 1tsp minced garlic...I only added about 3tb water to the veggies when I added them...and I sprinkled Mrs. Dash over the fish. YUMMY! We will make this again and again!
I too found this to be bland. The potatos weren't fully cooked and the zucchini was mushy. Neither my wife or I cared for this meal.
In addition, while the recipe is titled "Baked Fish Dinner For Two" I point out that the yield is four servings.
I used haddock and seasoned it with a little old bay seasoning instead of salt and pepper. We were pleasantly surprised at how good this was. This is a meal I'll make often.
Next time I would cook the potatoes a little longer and add the zuchini a little later. You can also get by with much less oil.
This dish was so easy to make. I love dinners that are cooked all in one dish, it makes clean up a breeze. The recipe was good, however based on prior reviews I added some Italian seasoning and used only 3tbsp oil total. I also added some fresh lemon juice to the fish before cooking it. This made the recipe a lot less bland than it would have been. The meal was nice and light too but still left you satisfied. I will be making this again in the future!
Very easy and delicious. You can easily substitue other veggies except for bell peppers. Bell peppers are the key in this recipe.
It took a while to prepare and I was so disapointed with the bland taste. No one in myfamily ate it.
The fish needed to be blackened or some type of flavor added to it. The same with the vegetables. This was easy to make, but very bland tasting, not much flavor.
