I made this without the bacon (I know, major part of the sandwich, right?) because I don't eat bacon. I really liked this simple yet quick and easy to prepare bagel melt. I added some garlic powder and fresh ground black pepper on top and used an onion bagel. Seriously delicious!

This tasted like a mouthful of mustard! I thought it was a lot of mustard. I even used enough to make just a swirl around the bagel. I used the thin bagels the grocery stores sell now, dijon mustard, 1/2 fat cheddar, and a couple slices each of pre-cooked bacon along with the tomatoes. Instead of heating the oven to 350 I just broiled them on low until the cheese bubbled. If I could think of something to replace the mustard these could probably be really good.

I do this all the time but with a cinnamon raisin bagel instead. Delish!

Perfect for a quick lunch! I toasted my bagel first and used dijon mustard. I added some salt and pepper to the tomatoes slices and this was perfect for the toaster oven. All it needed was a nice dill pickled on the side.

My husband and I make something similar to this. We use regular bagels with a thick layer of cream cheese then add the canadian bacon, or whatever meat you want then cheese. We typically use swiss but we'll have to try the cheddar!! You should really try this!!!
