Bachelor's Hash

"This is so easy and inexpensive and quick to put together. I use a glass 8x8 or a small rectangle baking dish. The layers show through the glass and look very inviting. If you want to use a 9x13 baking dish, just double everything."

Original Recipe Yield 1 8x8-inch baking dish
 

Ingredients

  • 1 pound ground beef
  • 1 cup chopped onion, divided
  • 3 large potatoes, grated
  • salt and ground black pepper to taste
  • 4 carrots, peeled and grated
  • 1 (15.25 ounce) can whole kernel corn, drained
  • 1 (15 ounce) can green beans, drained
  • 8 slices bacon

Directions

  1. Preheat an oven to 375 degrees F (190 degrees C).
  2. Heat a large skillet over medium-high heat, and cook and stir the ground beef until the meat is crumbly and evenly browned. Drain and discard any excess grease. Transfer the beef to an 8x8-inch baking dish.
  3. Layer about 1/4 of the onion on top of the beef, then spread the grated potatoes over the onion. Season with salt and pepper. Spread another 1/4 of the onion over, then layer the carrots on top. Season with salt and pepper again. Add another layer of onion, then cover with the corn. Season with salt and pepper, then top with the remaining onion. Spread the green beans over the onion, then arrange the bacon slices on top. Cover with aluminum foil.
  4. Bake in the preheated oven for 40 minutes, then remove the foil and continue baking until the bacon is crisp and the potatoes are tender, about 20 minutes more.

  • Cook's Note
  • I have made this so many times, and each time it seems I do something different. The one thing that is always a hit is adding sliced mushrooms. I have added a can of tomato sauce. I add the foil on top because by the time the dish is cooked, the bacon is usually overcooked. I have also seasoned the ground meat with an envelope of taco seasoning and added a can of beans such as kidney beans, black beans or pinto beans to replace the green beans.
