Directions

  1. Cut bread into slices and toast.
  2. Rinse avocado. Cut in half. Remove the pit. Spoon out avocado into mixing bowl and mash with a fork. Add lemon juice, salt and pepper and mix. Spread a small spoonful of avocado mixture on each toast slice. Top each with small spoonful of tapenade. Garnish with sprigs of fresh herbs (basil, Italian parsley, parsley, etc.).

  • For easy portable appetizers skip toasting the bread, pack the spread in the cooler and add a jar of tapenade or whatever topping you prefer. Great for tailgating!
  • Note: You can put the avocado, lemon juice and salt and pepper into a sealable plastic bag, and mash with your hands. Cut off the tip of one corner of the bag and pipe the spread onto toast slices.

It looked like a good idea, but the taste was really odd. The sun-dried tomatoes had to be scraped off because they tasted so bad on the bread. I think it would have tasted better with chilled avocado on cornbread with chilies.
