I have made this sort of dish for breakfast, lunch & even dinner. We visit Mexico several times a year (Playa del Carmen is my favorite spot on the entire Globe). I love making my family true authentic Mexican recipes. It brings back so many wonderful memories. I don't eat meat or dairy but my family has nothing but praise & compliments when I prepare this dish. A few suggestions for the recipe but it's perfectly fine as is w/ it's simple ingredients. I would add some Cilantro just before wrapping it up. I would also use Flour Tortilla's & perhaps Burrito sized ones instead. I would slice up an Avocado & drizzle it EVOO & lime, as a side or just add the Avocado inside . Don't forget to add the Sea Salt. (throw away your Table Salt it's no good). Read the ingredients in the Tortilla's too, a lot of them are nasty. I would like to comment on the one, 1 star review, posted by "FusionCook". First off there are a ton of health benefits from Chorizo. It's a good source of Thiamine, Protein, Selenium, Choline & B-12. If you do the math in regards to this recipe then each person is only consuming 1.5grams of Chorizo, that equals 0.6 grams of fat. Don't worry about it. Also, contrary to popular belief Wheat Tortilla's are not good for you, do some research. Don't use substitutes they are full of fillers & horrible additives. Seems as if someone is following a Faux Diet. So many people are misinformed/ill b/c of this false info. Remember,stay as close to nature as humanly possible!
