Oh my gosh!!! This was SOOO crazy good. Was surprized at how the ingredients worked together. Not usually a fan of har boinled eggs, but this was fantastic. Easy enough for a non-cook.

This recipe was great. I was just making it for me and I'm trying to watch my calories. So I halved this recipe, used olive oil mayo instead of regular, used 1/2 oz of goat cheese instead of cheddar and put in on one piece of day old ciabatta bread instead of two to lower the calories. FANTASTIC.

What a great luch! Chopped up chick peas and cut the cheese in half to make it more healthy - yum!

This recipe is super simple and delicious. The flavors go together perfectly. We followed the directions exactly and were very pleased. My toddler even liked it, except that she picked out the artichokes and had it untoasted on regular wheat bread. (To clarify my rating, I'd probably have said it was a 4-4.5, but my husband was so crazy about it he's insisting I give it a 5!)

Ok, so I'm the first to review this and it was pretty tasty! The only changes I made were that I used white bread (didnt have the other). Next time I make this I might sprinkle a little salt on the eggs. Obviously you have to like artichokes and dijon mustard to like this, which I do, so I thought it was very good!
