Ingredients

  • 1 cup Apricot KERNS® from LIBBY'S® All Nectar
  • 1 tablespoon honey
  • 1 tablespoon butter or margarine
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons cornstarch
  • 1 pound baby carrots

Directions

  1. COMBINE nectar and cornstarch in small bowl; mix until smooth.
  2. COOK carrots in boiling water for 10 minutes or until crisp-tender; drain. Return to pan and add honey, butter and salt. Add nectar mixture and cook over low heat for 5 minutes or until apricot glaze is thickened.
