  1. In medium saucepan, combine 1-1/4 cups water, butter, ginger, cinnamon and contents of Spice Sack; bring to a boil.
  2. Stir in couscous, apricots, raisins and green onion. Cover; remove from heat. Let stand 5 minutes. Fluff lightly with a fork.

I did not make this exactly, because I used some couscous already on hand & made up my own idea of what would be in the spice packet (garlic powder, ground coriander, a little cumin). The flavor is wonderful. I will definitely make this again.

I noticed some eyebrows raising when friends and family discovered couscous on my Christmas dinner menu this year. Okay. So it's not the most traditional item for the holiday meal, but I was feeling adventurous...Good thing, too -- NOW they're all raving about it and calling me for the recipe. i had never tried couscous before, and decided to make this for easter. i LOVED it and everyone else loved it equally! The fruit made it absolutely scrumptious. wonderful wonderful. my tastebuds were in heaven

This was good.......it turns out that we don;t like couscous, but I gave it 4 stars becasue my new sister-in-law from vietnam LOVED it and asked for the recipe and for the leftovers
