Followed the recipe as written. I was a bit concerned when I saw how thick the batter was before spooning it into the muffin tins, but they turned out great!!! (very light, spongy, and not overly sweet) I doubled the recipe and made 12 large muffins and 24 minis. The mini muffins took 16-18 minutes to cook. Enjoy!

OMG!!! these are so good! I didn't have buttermilk, so I used sour cream. I also just needed a few muffins, so I made half the recipe. I used one green apple, granny smith. When putting on the topping, try to sprinkle towards the middle, otherwise, they melt all over the pan if you go too far to the sides. These are delicious! I did not put the topping on all of them, just to see how they taste and those were even great! Either way worked for us.

These are very good, a wonderful apple flavor. But don't fill the muffin cups to the top, they will just overflow.

These were super delicious! I adjusted the recipe only slightly by using a 1/4cup less brown sugar and adding no topping. They were still sweet and full of appley goodness!

VEGETARIAN APPROVED - I've been on this site for over a year and have NEVER left a review. So, seeing as I'm compelled to leave one now, you know just how wonderful these muffins are! My ever so picky eater 8 year old loved these, as well as my hubby and finicky 2 year old. They ALL gobbled them up! One bite and hubby's head jerked in a way I'd never seen before with a resounding "MMMMMM" hahaha. I made them last night before bed and only have 4 left this morning. I have a feeling they'll be gone before the end of day. Since we are vegetarians I substituted 1/4 cup applesauce for the egg. I also didn't have buttermilk so I used 1 cup whole milk with 2.5 tbsp of apple cider vinegar. I let that sit for 10 minutes to sour. Works as a great substitute when buttermilk is not handy. They still came out moistly fantastic! Otherwise I made the recipe EXACTLY as is! Will definitely make again. (my daughter has already asked me to bake some for Valentine's Day).
