First you make a traditional apple pie filling, and then things get more interesting. Half the apple mixture is spooned into a deep-dish pie shell and layered with caramels and a taffy mixture. And then more apples, caramels and taffy go in. And then it 's baked and served warm.

This easy-to-do recipe reminds us that apples need very little help to make a memorable pie. Apples are simply layered in the pie pan, with each layer sprinkled with cinnamon sugar. Then they are topped with a crust and dabs of butter. And in less than an hour, this classic pie bakes to perfection.

This is a marvelous apple tart that can be made in a pie plate or tart pan if you have one. A frangipane filling really brings together the flavors of fall, and the apples create a beautiful design.

When your favorite apple is in season, pick up a bunch and make this luscious pie filling that freezes beautifully. Sliced apples are partially cooked on top of the stove with water, sugar, cornstarch, cinnamon and nutmeg. Then they 're ladled into containers and frozen. You 'll have enough for five 9-inch pies.
