Original recipe makes 1 1/2 quarts Change Servings

4 pounds apples, cored and chopped
2 cups apple cider vinegar
10 teaspoons ground cinnamon

5 teaspoons ground cloves
2 1/2 teaspoons ground allspice
4 tablespoons grated lemon zest

Directions

Place apples and 2 cups of cider vinegar or water into a large pot. Cook over medium low heat until soft.
Put the fruit through a strainer.
Measure the apple pulp by cup into a large mixing bowl. Keep track of how many cups of apple pulp you have added to the mixing bowl. For each one cup of apple pulp mix in 2 teaspoon ground cinnamon, 1 teaspoon ground cloves, 1/2 teaspoon ground allspice, and the zest of one lemon; mix well.
Spoon the mixture into a Dutch oven. Cook the mixture over a medium or medium-low temperature until it "sheets" from the spoon. What this means is that you put a small amount of the apple butter in a spoon and let it cool slightly. As it thickens, two large drops will form along the edge of the spoon (as you hold the spoon upside down over the pot) one drop on either side of the spoon. When these two drops come together and fall as one drop of the spoon, the sheeting stage has been reached.
Pour apple butter into hot sterilized jars. Process for 10 minutes in a boiling water bath.

My wife loved this recipe! She loves anyrhing cinnamon and this recipe has it! I made a batch for the holidays out of mixed apples from my neighbors trees. How sweet it is!

This recipe is not written correctly. First it has no sugar in the recipe and the amount of cinnamon is way too much.

I was looking at Apple Butter recipes & came across this one. I think it's supposed to read apple cider NOT apple cider vinegar. There would be no need to add vinegar, esp that much! Hope this helps. I haven't made this, so don't go by my rating, just wanted to help out.

I have to agree with TBURKE on this one. It has no sugar in it and is very bitter tasting. I wasted a lot of money, not to mention time, making this recipe.

Keep in mind that there are two types of apple butter, sweet and tart. This is a tart one, so if you want a sweet one, look elsewhere. Many people prefer it to be tart, so don't complain if you didn't think about the ingredient list.

This was a mistake. I only added half the amount of spices and I had to add 5X more apples. I could not rate it low enough -5 would be closer to correct.
