I am begged for this recipe whenever I serve it. My advice: Invest in a good candy thermometer and always, always, always use good ingredients. Do not use margarine as a substitute for the butter; the water content is too high.

Mom used to make this every Christmas that I can remember. We kids used to look forward to it. Now I make it for my family.

When I was young, I could hardly wait for the holidays because I knew these rich cookies would make an appearance on the cookie tray. Now I make them for holidays throughout the year.

My easy recipe is an old favorite that we keep in steady use from mid-November until the New Year. Homemade gifts are still a Christmas tradition at our house.

We've been making this candy for years. It continues to be a tradition for when the kids and grandkids cone home for the holidays. I've substituted pistachios for the almonds with wonderful results.

'This is one of my favorite recipes for last-minute school bake sales,' writes Sandy Kerrison from her home in Lockport, New York. 'The cake-like snacks are the first items to go...that is, if they're not grabbed by a teacher first. I also include them in Christmas cookie gift baskets.'

My Mom got this recipe many years from a Chinese man who lived across the street from us when I was growing up. They are very good cookies and so easy to make.
