Agent Orange Habanero Pepper Paste

"This very hot and flavorful pepper paste can be used to spice up any dish or used as a hot sauce. Use gloves when cutting peppers or your hands will burn for days. Also make sure to cook in a well ventilated kitchen. If your vent hood does not work well, open some windows and use a fan."

Directions

  1. Bring the habaneros and water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer 15 minutes. Remove from heat, and stir in carrots, onion, cumin and garlic. Carefully puree the vegetables in a blender until smooth, then return to the saucepan, and continue simmering 45 minutes to 1 hour until thickened to the consistency of oatmeal. When ready, refrigerate overnight before using.

This is a nice recipe for habanero paste. The 24 serving size makes more than 1 and a half cups though. We ended up with almost a tomato sauce jar full. Tried it this morning on a breakfast burrito and my lips are still burning. =)

My boyfriend loves habanero in his chili, so this is great to add to any crockpot dish for a little kick, I have found. He is 'mr plain', so I put the water and pepper in the blender and puree them, add a cup of what ever applesauce I have around and simmer uncovered until the water cooks out and jar it up. Great consistency and tastes true to the fresh habanero flavor every time.
