This was great! Spicy, flavorful, and filling. I did not use two full cups of water, more like 1/3 of a cup, and I half-mashed both the beans and the sweet potato to give some texture. My only gripe:the tortilla got crisp in the oven.

Love these!! So yummy! I used 1/2 kidney and 1/2 black beans. Stored the extras in the freezer for easy lunches. Definitely will make again really soon!!

Will make again! My picky meat-lover husband loved them! I used canned yams, and mix of black and kidney beans. Also added a little cinnamon. DO NOT use all the water the recipe states, just use what you need for the right consistency. I topped these with sour cream (actually Cream Mexicana) and that is the cherry on the top!

My husband and I loved these. I used pinto beans instead of kidney and they were perfect. Not that I wouldn't have used kidney, I just didn't have any. Also used taco cheese instead of cheddar... The rest was all the same and they turned out awesome!

There were pretty good. They ended up being kind of bland without garnishes like sour cream and tomatoes and lots of cheese. Will make again, but will def use a lot more seasoning. Great starting point! Thanks!

For the burrito rolling impaired: mix sweet potato with bean mixture prior to adding to tortilla.

Fairly easy and good base recipe. Served the burritos with homemade salsa. Next time I'll blend the sweet potatoes with the kidney bean mixture for a more even distribution and add some shredded cheese inside the burrito. Will also spray my baking sheet with cooking spray since it's not teflon.
