I used a julienne peeler to get angle hair cut zucchini. Didn't nuke or steam. Also used yellow squash. Heated the zucc in the pan after I sauteed onions and mushrooms then tossed with some "Sicilian Garlic Sauce". A little cheese on top. For ease in using the julienne peeler I stick a bbq skewer thru the squash about a inch and a half from the end. Hold the skewer, peel, flip to the other side, reposition skewer to peel two remaining sides. .
Awesome!! Loved this simple idea!! Worked great as a pasta substitute. Used my vegetable peeler to make the noodles, and then sautéed for a couple of minutes in water till soft. Thanks so much for the perfect solution to grain-free "noodles." I will definitely be making this often!!
