  1. Place chicken breasts in shallow dish and pour thawed Margarita mix over chicken. Cover and refrigerate several hours or overnight, turning chicken once. Remove chicken, reserving marinade.
  2. Heat 2 tablespoons of butter in a large skillet until bubbly. Brown chicken breasts two minutes per side. Season with salt and pepper.
  3. Stir chicken bouillon cubes into reserved marinade, then pour over chicken in skillet and bring to a boil. Reduce heat, cover and simmer for 7 minutes or until chicken is tender and cooked through. Remove chicken and keep warm.
  4. Bring marinade to a boil and stir in remaining tbsp of butter. Dissolve cornstarch in water, then add to skillet. Cook stirring constantly until mixture thickens and boils for 1 minute. Serve over chicken.

Wow! Very delicious. Marinated overnight. Needs to be served with a vegetable. We had it with spicy bean salsa, which was also very good, but it wasn't quite enough...maybe some lime-juice corn?

I was not impressed with the recipe. The chicken was tender and everything but the taste was too much for me and I love limes.

this chicken is yummy! I bbq'd the chicken and just made the "lime sauce" in a sauce pan on the stove. I got rave reviews from the family.

Very simple. I melted in cream cheese to leftover marinade, served over a thin bed of lettuce with crumble tortilla chips on top. Good stuff!
