Bacon, Asparagus, and Cheese Sandwiches

Bacon, Asparagus, and Cheese Sandwiches

"When I was a kid my sister and I LOVED when my mom made these. We would always argue about the order the ingredients should go on the toast. (Of course, I'm submitting this in the order I liked.) It was also a good way to get us to eat asparagus."

  1. Adjust oven rack to upper position, and set oven to broil. You may also use a toaster oven to cook the sandwiches if you don't want to broil them in the oven.
  2. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown and crispy. Drain on paper towels.
  3. Place a few spears of asparagus on a slice of bread. Top with 2 slices crisp bacon then a slice of cheese.
  4. Toast under the broiler until the cheese is melted and bubbly.

For someone who never seems to have enough time to eat, let alone cook, I have to say this is a great recipe. It's quick, it's delicious, and I had all the ingredients just laying around. I did...

I made this with fresh asparagus that I simmered for a few minutes in salted boiling water, and then sliced in half. The cheese and bacon was, of course, delicious, but I didn't think the aspara...

I took these sandwiches to my sisters bridal shower and they were a hit. I followed the recipe just like it is and the only thing I would recommend is to either serve them immediately or heat th...

I made these exactly as suggested and was not impressed. I love asparagus, but it was not good in these sandwiches. Canned asparagus stinks, I know, but I have a feeling that they wouldn't have ...

I thought this was good! To lighten it up a bit I used turkey bacon which to me is a GREAT substitute and I didn't have the sourdough bread so I used some rye. Also used fresh asparagus. Grea...
