  1. In a large saucepan, saute onion and green pepper in butter until tender. Stir in corn, tomato, salt, pepper and cayenne. Reduce heat; cover and cook for 5-10 minutes or until heated through, stirring occasionally.

This was a nice way to change up corn. I did decrease the amount of salt to 1/2 t. and added 1/8 tsp. cayenne, which just the right amount of heat for us. Great way to use up summer veggies.
