  1. In a large skillet, heat 2 tablespoons of oil over medium heat. Slowly cook and stir onions and celery until golden brown; remove from heat and set aside.
  2. In the same skillet, heat the remaining 2 tablespoons of oil. Place beef slices in the skillet and heat until well browned. Stir in salt, pepper, soy sauce and water.
  3. Cover and simmer for 30 to 40 minutes. Return the onion and celery mixture to the skillet and simmer for another 10 minutes.
  4. In a small bowl, combine the water and cornstarch. Pour the mixture into skillet. Stirring constantly, heat until thickened.

This is a pretty good meal. I looked at my "fresh" celery and rather than trying to salvage the green parts, I opted to substitute it and the cornstarch with 1 can of condensed cream of celery....

This was OK, nothing special. I probably won't make it again but if I did I would double the meat, there definitely wasn't enough.

This was a good recipe and easy to make. I would use a little less pepper if serving it to kids.
