  1. In a large pot, combine cauliflower and potatoes with just enough water to cover. Bring to a boil, then reduce heat and simmer until tender but not mushy, 10 to 15 minutes.
  2. Drain off about 1/4 of the water. Stir in mushrooms, onion, ham and cheese. Cook, stirring, until cheese is melted and mixture is heated through, about 10 minutes.

I don't know - maybe I did something wrong. But my Velveeta didn't melt well with the water, and the soup ended up waaay too watery. I'd try this again, maybe with milk.

Mmmm, comfort food at its best. I added the buillion cube as suggested. I didn't peel the potatoes and that was fine. The mushrooms were great. We will definitely make again!

I really enjoyed this soup. Although hubby didn't, he doesn't like cauliflower or mushrooms. It did make alot though. But, will problably make again.
