  4. Heat 1 tablespoon oil in a large skillet over medium-high heat; cook and stir hash brown potatoes until cooked through and browned, about 10 minutes.
  5. Spoon scrambled eggs onto a plate and top with salsa and bacon. Serve potatoes alongside eggs.

This was a nice Sunday breakfast. One note - start the hash browns first, they will take longer than 10 minutes. I used Monterey Jack cheese which was great with roasted tomato salsa. Based o...
