  1. Stir cream and coffee granules together in a bowl until dissolved. Add mascarpone cheese, confectioners' sugar, and vanilla extract; beat on low speed using an electric mixer until mixed. Increase speed to high and beat until soft peaks form; transfer to a serving bowl. Sprinkle chocolate over dip.

Light and yummy! Perfect dip from biscotti!

I added two tablespoons of light rum and some cocoa powder. And eliminated the chocolate chips. I used it as a filling for chocolate cupcakes. Amazing!
