  1. Heat olive oil in a skillet over medium heat. Cook and stir onion in the hot oil until softened, 5 to 10 minutes. Add chickpeas and garlic to onion; cook and stir until heated through, about 5 minutes. Mix red pepper flakes, lemon juice, salt, and pepper into chickpea mixture; cook and stir for 3 minutes more. Stir parsley and mint into salad.

I made this exactly as written and couldn't taste the lemon, parsley or mint, so I ended up using about 1 tbsp of each. I also added more garlic. With these amounts, the chickpeas are very flav...

Delicious, so easy, great flavour, super filling. The fresh mint is definitely essential so don't skip it. Not too much though! I added more onion and garlic than instructed.
