  1. Place cauliflower chunks in a food processor and pulse until broken down into rice-size pieces.
  2. Heat olive oil in a skillet over medium heat; add cauliflower 'rice', salt, and pepper. Cover skillet and cook until heated through, 3 to 5 minutes. Remove lid and fluff 'rice' with a fork.

I thought this would be a little bland but I was wrong. The flavor comes through well. I will definitely be making this again. A cheese grater works well making the cauliflower into rice.

Bland w/o a lot of's raw cauliflower. Needs some kind of sauce...cheese, salsa, curry, whatever. Definitely taste along the way...more salt and pepper.
