Slow Cooker Chipotle Chili

Slow Cooker Chipotle Chili

"My friend Keni's love of smokey chipotle peppers inspired this recipe. It comes together perfectly and is a unique chili that will stand out against others. It is a spicy chili that at the same time is mellow. It gives you the kick without the lingering burn like many chilis do."

  1. Heat a large skillet over medium-high heat. Cook and stir beef and sausage in the hot skillet until some of the fat renders, 2 to 3 minutes; add onion and garlic and continue to cook and stir until the meats are browned and crumbly, 5 to 7 minutes more. Transfer beef mixture to a slow cooker.
  2. Stir kidney beans, chili beans, diced tomatoes, crushed tomatoes, celery, green bell pepper, red bell pepper, chipotle chiles, bacon bits, chili sauce, hot pepper sauce, chili powder, brown sugar, cumin, and salt with the beef mixture.
  3. Cook on Low until vegetables are completely tender but the celery retains a slight bit of firmness, 6 to 8 hours (or 3 to 4 hours on High).

I have never made chili before and made this the other night for 10 people and everyone loved it. There was none leftover. People said its award winning.

I made this for a chili cook off and won first prize and came home with an empty pot!!!

Excellent! Love this recipe!! Big hit at my friends house on a Sunday watching football on a blustery fall day :-) Nice smoky flavor with spice. Will definitely make again

Very flavorful, loved throwing it in the crockpot to simmer in those flavors.

Not spicy enough. Needed more flavor, cilantro and/or scallions would be a great addition.

This is the best chili I have ever had! Everybody loves it- unless I make it too hot for them. :) I use turkey sausage and ground turkey. fabulous!

I omitted the beef and used kidney and garbanzo beans. I added extra cumin and adobo and omitted chili sauce and hot sauce. Too many ingredients. These changes made it easier and tasty.

This was my first attempt at chili and it won first place in my office chili cook off!! (It won by a land slide, by the way.) I made a few highly recommended substitutions: pork chorizo instead ...

super easy! super good! The flavor was spot on.
