  1. In medium saute pan, add oil and saute scallions for 3 to 5 minutes. Add the sausage slices and apricots, saute for 5 minutes. Add rice, broth, simmer 1 minute, then add the sage, and parsley. Cook for another 2 to 3 minutes.
  2. Add yogurt and basil, and heat thoroughly 1 to 2 minutes.
  3. Season with salt and pepper. Fold in grapes. Place in large bowl or serving dish and top with almonds. Serve either warm or cold.

Footnotes

  • Note: If almonds need roasting, preheat the oven to 350 F. Spread the almonds in a pie plate and toast in the oven until golden brown, approximately 4 minutes, then cool.
  • You may substitute a quick cook brown rice for added fiber in this recipe.

My family did not care for this recipe. We found that the cup of Greek yogurt was a bit much.

Liked it! We used a locally made Mediterranean sausage [bulk] which has a hint of fennel in it. I doubled the apricots, only used 1/2 cup greek yogurt. I will leave the grapes out next time, m...

My husband loved it. I did however changed the apricots to craisins prep was a bit much
