  1. Heat a large skillet over medium-high heat. Cook and stir beef and garlic pepper in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
  2. Stir corn, ranch dressing, salsa, and oregano into ground beef mixture; cook and stir until hot and bubbling, 5 to 10 minutes. Serve over cooked rice.

  • Cook's Note:
  • For pitch-in dinners: Put the rice in the bottom of a baking dish with the meat mixture on top. Top with cheese and heat in oven for 10 minutes at 350 degrees (175 degrees C), until cheese melts.
  • Substitute ground chicken or turkey for the ground beef if desired. Sour cream can be substituted for the ranch dressing.
