  1. Combine marshmallows, butter, and vanilla extract in a large microwave-safe bowl; cook in microwave until melted, about 50 seconds; stir.
  2. Mix 1/2 cup peppermint candies into marshmallow mixture; add rice cereal and stir until evenly combined.
  3. Press mixture into a 9x13-inch dish. Sprinkle 1 tablespoon peppermint candies over the top.


  • Cook's Note:
  • Peppermint can be taken out or replaced with other hard candies.



When asked how this recipe compares to just the regular Rice Krispies bars, my granddaughters declared that these are the best! I do think that if left to their own devices that they would have...

I made this without the peppermints and it was excellent, the kids loved it. I think I'm going to try mixing in a 1/2 cup of chocolate chips next time... yum :)
