  1. Heat a lightly oiled griddle to 350 degrees F (175 degrees C).
  2. Stir pancake mix, pumpkin puree, water, white chocolate chips, pecans, and cinnamon together in a large bowl until just incorporated, adding more water as needed.
  3. Drop batter by 1/2 cup scoops onto the griddle and cook until bubbles form and the edges are dry, 2 to 4 minutes. Flip and cook until browned on the other side, 2 to 4 minutes; repeat with remaining batter.

  • You can use any mix you prefer. I use Krusteaz(R) for the added low-cost factor. I have tried Bisquick's low-fat mix and they come out great also.

I happened to be out of white chocolate chips, I used Hershey's cinnamon chips. Instead of stirring them into the batter, I sprinkled a little over the batter after I ladled it onto the griddle....
