  1. Heat olive oil in a large skillet over medium heat. Cook and stir onion in hot oil until tender, about 5 minutes; add garlic and continue to cook and stir until fragrant, about 1 minute more.
  2. Stir tomatoes, chicken, red bell pepper, raisins, olives, red wine vinegar, oregano, cumin, and bay leaves into the onion mixture; cook until heated through, 5 to 7 minutes more. Remove and discard bay leaves before serving.

My husband and I both really liked this and deemed it "A Repeat." I will say it is very weird to mix these ingredients--even looks weird when done--but it tastes delicious. It's even better left...

Wow what an interesting mix of flavors that work amazingly well. I had everything at the house and thought I would try it. Could not imagine that it would work so I made it for lunch with a back...

Delicious! Quite an array of flavor! The only change I made was I used rotisserie chicken rather than canned chicken. Yummy and few calories!

Rave reviews, everyone loved this resulting flavor combination. Looking forward to making again. I used unstuffed castelvetrano olives and the flavors worked out great.
