  1. Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until barely tender, about 10 minutes. Drain. Rinse potatoes with cold water to cool completely; drain.
  2. Stir mayonnaise, pickles, eggs, red onion, celery, mustard, vinegar, salt, and pepper together in a large bowl. Fold potatoes into the mayonnaise mixture.

Loved this! I only used 1 cup mayo and 2 T mustard. Just like my mom used to make. This is a keeper.

The best I've ever made or eaten!

Made this for something to go with hamburgers. It was excellent. There were only four of us so I adjusted the recipe. Everybody loved it. Will defiantly make again.

Made this for the first time, and it's probably the best homemade potato salad I've ever made. Definitely making this again!
