  1. Soak raisins in a bowl of water until softened, about 20 minutes. Drain.
  2. Combine carrots, raisins, pineapple, coconut, and salt in a bowl. Mix yogurt and mayonnaise in another bowl; stir into carrot mixture. Cover and refrigerate until chilled.

I did not have pina colada yogurt, I used equal amounts vanilla greek yogurt. The kids and I thought this was really tasty. The coconut, pineapple, raisins and yogurt give it just enough sweetne...

I didn't have the pina colada yogurt, so I used plain nonfat greek yogurt and added a bit of honey. I also used golden raisins (personal preference) and reduced fat mayo. I made a carrot cake ...

I used a whole cup of coconut and a whole small can of crushed pineapple. I used coconut, Greek yogurt.

Great flavor and taste! I used just normal, plain greek yogurt, and it was still delicious!

I did manage to find the Pina Colada Greek Yogurt. If you can't find it, there are several tropical blends that should fit the bill. I used golden raisins. We had it for Easter and it was a hit!
