  1. Beat butter and 1 cup sugar with an electric mixer in a large bowl until smooth. Beat egg and vanilla extract into the butter until completely blended. Add flour, cinnamon, baking powder, lemon zest, and salt; continue mixing until flour is just incorporated. Cover bowl with plastic wrap; refrigerate until firm, about 2 hours.
  2. Preheat oven to 350 degrees F (175 degrees C).
  3. Stir 1/2 cup sugar and cinnamon together in a bowl; spread onto a flat surface.
  4. Divide dough into about 60 small balls. Roll balls in cinnamon-sugar mixture to coat. Arrange onto baking sheets.
  5. Bake in preheated oven until edges are lightly browned, about 10 minutes.

Did what it said to do but did not like the texture turned out flat and the lemon flavor just was not there enough. I don't like snicker doodles. But thanks anyway.

These were really good. I did not have a lemon to zest so I replaced the zest with 2 tsp of lemon juice. I did not have time to refrigerate them for 2 hrs but just baked them right after mixing...

This is the first recipe I have taken the time to rate. Both my husband and I rate this 5 stars. The lemon zest adds a welcome taste of light - reminding us of spring!
