  • Prep

  • Cook

  • Ready In

  1. Preheat oven to 325 degrees F (165 degrees C).
  2. Arrange chicken breasts, potatoes, and onion in a large baking dish.
  3. Mix ketchup, brown sugar, Worcestershire sauce, vinegar, margarine, lemon juice, dry mustard, salt, paprika, chili powder, and red pepper flakes in a saucepan. Bring sauce to a boil, stirring constantly to dissolve brown sugar and salt. Pour the sauce over chicken and vegetables. Cover dish with aluminum foil.
  4. Bake in the preheated oven until chicken is no longer pink, the juices run clear, and the sauce has thickened, about 2 hours. An instant-read meat thermometer inserted into the center of a breast should read at least 160 degrees F (70 degrees C).

Footnotes

  • Cook's Note:
  • Preheat oven to 325 degrees F (165 degrees C) if baking 2 hours or more or to 275 degrees F (135 degrees C) if cooking over 4 hours.
  • Tip
  • Aluminum foil helps keep food moist, ensures it cooks evenly, keeps leftovers fresh, and makes clean-up easy.

The chicken is definitely moist. My husband loved this recipe as-is, but I would prefer less brown sugar in the sauce. Will be making this again!

So yummy! I was surprised at how moist the chicken was, and the potatoes were great. The sauce was really flavorful. This may not be a very healthy meal, but it sure is awesome!
