  1. Heat olive oil in a skillet over medium heat. Cook and stir onion and garlic in hot oil until onion is translucent, 3 to 5 minutes; season with salt and pepper.
  2. Stir zucchini and basil into the onion mixture; cook and stir until zucchini is soft, about 5 minutes. Add tomatoes and mozzarella cheese; cook and stir until the cheese melts, about 2 minutes.

Searched for a recipe to use up some zucchini and |I found this. Was going to use it as a side dish to some pork chops...when I went to the freezer I saw a package of tortellini and got inspired...

The recipe doesn't match the picture at all. Pasta and buffalo mozzarella not even mentioned. My husband told me not to make it again. It really didn't have much flavor.

Good and easy to prepare. We had this as a side dish for Tilapia Scaloppine (recipe also from AR)for a wonderful meal that we'll enjoy often in our household. Thanks for sharing patrice.

Excellent and so easy! I used grated Romano cheese instead of the mozzarella (didn't have any) and added some red pepper flakes.

Had a zucchini and super delicious farm fresh tomatoes to use and it was delicious. Will save and make again.

So glad I found this recipe. We really enjoyed it. No changes needed.

Made it. Tasted great. Husband requested seconds. Used whole wheat spaghetti and some Sriracha sauce for a little spice.
