Cucumber Honeydew Salad

Cucumber Honeydew Salad

"Refreshing and healthy salad perfect for summertime. The sweet of the honeydew balances out the zip of the red onion, the coolness of mint, and finally the slight saltiness. The flavor really develops in waves. I'm always asked for the recipe."

Delicious, unique, refreshing! Reduced oil, added 1 tsp. Honey.

Great summer salad! Not too sweet and the mint and onion give it great flavors. With a super sweet melon, there is no need to add sugar ot honey. Also I just used a small drizzle of olive oil. ...
