"Seriously yummy and sweet salsa. Combine with chips, chicken, etc. for a great snack or meal. I was looking for a recipe for mango salsa, and the options I found weren't quite what I wanted. So, I tried this. It worked."

  • Cook's Note:
  • I cannot personally take very spicy foods, so take that into account when seasoning your salsa with ginger. A bit of a wuss in the spice department? Still add some ginger, about a knuckle worth. If you really like it spicy, use a lot of ginger or consider adding a spicy pepper. Also know the amounts listed above are suggestions. I used slightly less than half a white onion each time I made the recipe, and eventually I just took big handfuls of cilantro and mint. I promise you, it will still taste great.
