  1. Mix sugar and lime gelatin mix in a large bowl.
  2. Stir 4 cups boiling water into gelatin mixture until sugar and gelatin have dissolved.
  3. Thoroughly chill gelatin mixture in refrigerator, about 1 hour.
  4. Place lime gelatin mixture into a large punch bowl; stir in pineapple juice, lemon juice, almond extract, and 4 cups cold water until thoroughly combined.

I served this recipe to friends at a social gathering with a St. Patricks Day theme. I received many compliments on the taste and the beautiful color of the punch. It was delicious. I did, howev...

I have made this recipe several times and it disappears quickly. I have never added the almond extract and it is still delicious. I guess, I'll add it next time.
