Pepped Up Chicken

Pepped Up Chicken

Rae

"This dish goes together quickly and is a favorite with kids. I like to serve it with angel hair pasta tossed with butter and a salad. On nights that I don't have time to marinate the chicken, I just coat it with the dressing."

  • Prep

  • Cook

  • Ready In

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Place the chicken breasts and Italian dressing in a zip-top bag. Seal bag, and refrigerate for at least 1 hour.
  3. Remove chicken from marinade and place in a baking dish. Discard used marinade. Layer pepperoni slices evenly over chicken. Cover dish with foil, and bake in the preheated oven until the juices run clear, 30 to 35 minutes. An instant-read meat thermometer inserted into the thickest part of a chicken breast should read at least 160 degrees F (70 degrees C).
  4. Remove chicken from the oven, uncover, and top each chicken breast with a slice of provolone cheese. Return to oven and bake until cheese is melted and bubbly, about 5 minutes.

This is my new favorite meal! My dad and I make this every other week or so! You can either use provolone (which I suggest) or sprinkle Parmesan on it, but I do both (I like cheese) Great with a...

Mmmm. So easy and so yummy. My 4 year old daughter even eats it (trust me that's saying something). This is simple, requires very few ingredients and is an excellent spin on boring old chicken b...

I had been looking for a recipe for chicken and pepperoni for a while and I must say this one is tops! Very easy and delicious!

This was a hit with my family, we all enjoyed it; the combination of chicken, pepperoni and cheese was delicious, we'll likely be adding this recipe to our monthly rotation. Thank you for sharin...

Pretty blah..sounded more interesting than it tastes. Maybe it depends on the type of "zesty Italian Dressing" used and/or the thickness of the chicken breast.

In the words of my 18 year old, "it wasn't the greatest thing ever, but it was okay."
