Directions

  1. Preheat oven to 350 degrees F.
  2. In a large bowl, beat cake mix, oil, water and eggs until smooth. Add a little LUCKY LEAF Strawberry Pie Filling at a time, gently stirring to create swirls.
  3. Fill cupcake liners about 2/3 full of batter. Bake 20-25 minutes, or until a toothpick inserted comes out clean. Cool completely before frosting.
  4. Dreamy Buttercream Icing*: Cream butter until fluffy. Gradually add powdered sugar and beat until smooth. Add vanilla and 1 tablespoon heavy cream, and beat for 1 minute, adding more cream as needed to reach desired consistency.
  5. Spread frosting onto cool cupcakes. Garnish with additional strawberries.

Footnotes

  • *For fluffier icing, place your mixing bowl and beaters in the freezer to pre-chill while you are making/baking the cupcakes.
  • **Makes 20 Regular Size Cupcakes or 80 Mini Size Cupcakes

I debated on how to rate this, as it is a recipe for both the cupcake and frosting. I decided that people shouldn't miss out because the frosting recipe is waaaay off (mine was ruined and I end...

Cool recipe. I added strawberry to the frosting and topped it with fresh halves of the berries. Delicious.

Very good! Made cake instead of cupcakes and was still really moist and great!

I agree with other reviewers that the entire can of filling would have been too much. I probably used about 3/4 can including putting some in with icing. So good i had to bring to the office o...

Made this today - what a joke. While the flavor is good, the texture is wet and soggy, the cupcakes collapsed while cooling. I don't think the recipe should imply that you should use the whole...

This was a really easy recipe. The only suggestion I would make is not to put too many of the strawberry chunks from the filling in one cupcake. Kind of made them fall apart. And my only comp...
