  1. Prepare Wacky Mac according to package directions. Drain and rinse under cold water. Place in large salad bowl. Add corn, beans, celery, scallions and chile. Toss gently but well. Add cheese.
  2. Stir together Italian dressing, lemon juice chili powder and cumin in a cup. Pour over salad. Toss gently but well.


  • Note: Look for a package of shredded cheese that includes Cheddar and Monterey Jack or, for a spicy alternative, shred a block of pepper Jack cheese. A cup of shredded cheese is about 4 ounces.
