  1. Trim the chicken of any fat and cut into chunks. Heat half of the butter in a large skillet set over medium-high heat. Add the chicken in batches and brown all over. Transfer the browned meat to a plate. Reduce the heat to medium.
  2. Add the onion and garlic to the pan. Cook, stirring often, until golden, about 8 minutes. Stir in the tomato paste, curry paste, ginger and cinnamon. Cook for 1 minute. Stir in the ketchup, yogurt, cream, chicken pieces and any juices that have accumulated on the plate.
  3. Simmer, partially covered and stirring occasionally, for 15 minutes or until chicken is tender and sauce is thickened. Stir in the remaining butter, lime juice and lime zest just before serving. Serve over basmati rice and garnish with chopped coriander (if using).

Footnotes

  • Twists
  • Twist 1: For an authentic Indian supper, serve with rice, cooked lentils and warm flat breads.
  • Twist 2: For a quick, sweet chutney accompaniment, blend equal parts Heinz Chili Sauce with orange marmalade or mango spread.
  • Twist 3: For a pantry substitution, use curry powder instead of curry paste.
  • Twist 4: For an Indian-inspired wrap, roll up the mixture in soft flour tortillas or roti.
  • Twist 5: For a Bombay-style shepherd's pie, top the chicken mixture with mashed potatoes mixed with peas.
  • Twist 6: For an amazing Middle Eastern chicken cobbler, top the mixture with biscuit mix sprinkled with cumin seed.
  • Excellent source of vitamin D and folate.

I used 3 Tablespoons of whipped cream cheese in place of the cream and yogurt, and instead of stewed tomatoes, I used peeled whole tomatoes. Came out wonderful. A little sweet tasting, but I th...

I hate to do this but I want to help others from making the same mistake. The cinnamon is very overpowering in this recipe. Also very salty flavor. If you don't like Indian food don't waste your...
