  1. In a large bowl, combine yogurt, vinegar, mayonnaise, parmesan, and parsley; mix well.
  2. Add remaining ingredients, and toss to coat. Serve immediately with croutons if desired.



I wouldn't call the dressing for this salad "dressing" as it was quite thick and more "dip" like in consistancy. I did use some milk to think it down and even then, I didn't use all the dressing...

Great salad! A nice assortment of colorful veggies paired with a light, creamy dressing that's not overpowering. I added some olives and croutons to the salad and to the dressing I added a litt...

This salad is fresh and delicious and quick to put together. The only chage I made was to add about a tablespoon of olive oil to the dressing because it was very thick. Thanks very much!
