  1. Prepare canner, jars, and lids according to manufacturer's instructions.
  2. Combine tomatoes, vinegar, and Ball(R) Fiesta Salsa Mix in large saucepan.
  3. Heat to a boil. Reduce heat and simmer 5 minutes.
  4. Ladle hot salsa into jars leaving 1/2 inch headspace. Remove air bubbles. Wipe rims. Center lids on jars. Apply bands and adjust to fingertip tight.
  5. Process in boiling water canner for 35 minutes, adjusting for altitude.


  • Don't have fresh tomatoes? Use 3 cans (14.5 oz each) petite diced tomatoes.
  • You can easily make just one pint by cutting the recipe in half.

This is good but watery. Make sure you drain your tomatoes through a cheese cloth first. Not too spicy and it has a good flavor.

The salsa was great with just the right amout of zest. Easy for beginners. We did not have a problem with being too watery just boiled a bit longer.

This is a good first timers recipe. as with any salsa, if its watery, try another type of tomato or combining several types. I prefer adding amish paste with better boys/girls, 50/50.
