  1. Heat the olive oil in a large pot over medium heat. Stir in the garlic and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the beef broth, then add the ground beef. Cook for 10 minutes, stirring and breaking up the ground beef. Mix in the diced tomatoes and tomato juice.
  2. Stir in the mixed vegetables, pearl barley, basil, parsley, and pepper. Simmer until the barley is tender, 40 to 50 minutes.

I think that even beginner cooks would know to transfer the browned hamburger to a soup pot and add the remaining ingredients and continue cooking as directed. I found it to be very easy, quick...

We really enjoyed this meal. I did add another can of diced tomatoes as it is our favorite veggie. :)

I thought this was pretty good, but I personally didn't like the strong Italian herb flavors. I would cut down on parsley and basil in the future. I also would have hoped for more of a beef flav...

this recipe looks like chunks of beef yet the recipe call for ground beef. Which is it. Thanks..
