  1. In large bowl, combine chicken, grapes, celery, onion, cranberries, raisins and dressing. Stir until well combined. Cover; refrigerate at least 1 hour.
  2. Stir almonds into chilled chicken mixture.
  3. Place lettuce on each of 3 slices bread. Top each with chicken mixture and remaining slices bread.

  • For extra spice, add 1/8 teaspoon ground cinnamon to the chicken salad mixture.

I use leftover chicken breast, chop it up and use instead of canned chicken. Also good with walnuts for pecans instead of almonds. Red onions instead of reg. white onion- a little sweeter.
