  1. Heat the oil in a skillet over medium heat. Cook and stir the onion and garlic in the hot oil until the garlic is lightly browned and the onion is glossy, 7 to 10 minutes. Add the catfish; season with salt and pepper. Cover and cook for 2 minutes. Add the coconut milk and stir; cover again and cook until the coconut milk appears oily, about 10 minutes.

I loved it! Of course I had to add some additional seasonings (garlic, cayenne pepper and lemon pepper) but it was good... also added some cilantro and squeezed some lemon as well..yummm!!!

Another 5 stars because my family really enjoyed how the catfish was cooked in this recipe. The only change I made was instead of using cooking oil I used butter. Just a personnel preference ...

Took all the advice: added jalapenos, garlic, peppers and ginger. But the coconut milk made all the difference. Served over rice noodles. We really enjoyed this!
