Fruit-Nut Gelatin Salad


"I have made this many times. An old-fashioned molded gelatin salad with the unusual and tasty combination of orange gelatin, pineapple, cream cheese, pimento, celery, walnuts, etc. This particular recipe doesn't call for marshmallows, but you could always add some if you like."

  1. In a medium saucepan, heat pineapple and juice over medium heat until boiling. Add gelatin and stir to dissolve. Remove from heat and refrigerate until partially set.
  2. In a small bowl, blend the pimento into the softened cream cheese. Mix the gelatin mixture and cream cheese together, and then fold in the whipped cream, nuts and celery. Pour into a 1 1/2 quart mold and chill until firm.



This really is great! I tried it with green gelatin and used my bundt cake pan, and of course it looks "just like" a Christmas wreath. Great for the holidays!

Like others, once I saw all the ingredients I thought the jello would be too much - but it was a hit with nearly everyone at Christmas dinner. You must love celery though!

Tasted good, not too sweet which I liked. Just wished it was healthier.
