  1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes, or until al dente; drain. Meanwhile, in a medium bowl, mix egg yolks, cream and cheese.
  2. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  3. Add tortellini and bacon to carbonara sauce; cook sauce over medium heat for 5 minutes, stirring constantly.

I made this recipe with half cream and half milk. I did not like how it turned out. I am not sure why but I will not be using this again.

Marina, life doesn't get any better than this. To cut down on the fat, I used evaporated skim milk. Believe me, when I've spent a week making low fat dinners, I'll definitely do the heavy cream ...

there's ways you can cut down on the calories if that's what you're watching. i substituted the egg yolks with egg beaters and used "smart bacon" (you can find this usually in the health section)
